Do the mayonnaise packets need to be refrigerated?
Not while they are sealed. Commercial mayonnaise is acidified with vinegar and concentrated lemon juice, and that acidity is what keeps it stable at room temperature inside an airtight packet. A packet is single use with nothing to reseal, so once it is torn open, squeeze it out and use it.
