What is the difference between white and yellow popcorn?
Flavour, hull and how it eats. Amish Country describes its white popcorn as crispy and tender with a very mild flavour, and yellow as crunchier and denser with a stronger, more robust taste and a heavier hull. White also pops noticeably whiter on the plate. Yellow tends to hold up better under a heavy butter or caramel coating; white is the lighter, more delicate snack.
What does hulless popcorn actually mean?
It does not mean the kernel has no hull. Every popcorn kernel has one, and the hull is what contains the pressure that makes it pop. Hulless describes a small-kernel variety with an unusually thin shell that shatters into finer pieces when it bursts, so less of it is noticeable in the popped corn or lodges between teeth. Amish Country describes the result as less crunch and a more tender texture.
Can I use these kernels in an air popper?
Yes. Amish Country states medium white pops with any of the common methods, including air popping, stovetop and microwave. An air popper uses no oil at all, so the popped corn comes out drier and salt slides straight off it. Toss it with a little melted butter or oil first if you intend to season it.
Why did some of my kernels not pop?
Almost always moisture. A kernel pops because the water sealed inside turns to steam and builds pressure, around 135 pounds per square inch, until the hull gives way, and that needs a moisture content in the region of 13 to 14 percent. Kernels that have dried below that never build enough pressure. A cracked or damaged hull does the same thing by letting the steam escape.
How should popcorn kernels be stored?
Airtight, in a cool dark place at room temperature. The whole point is holding the kernel's internal moisture in, and an open or loosely folded bag in dry pantry air lets it escape, which is what turns good kernels into unpopped ones. Keep them out of the refrigerator and freezer, where cold and condensation work against the same thing.
Do popcorn kernels go bad?
Not in the way a fatty or perishable food goes bad. They dry out instead, and the symptom is performance rather than smell: more unpopped kernels at the bottom of the pan, and smaller, tougher pieces. Dried-out kernels can often be brought back by sealing them in a jar with a very small amount of water and shaking it now and then over a few days until the moisture redistributes.
How much popped corn does a 2 lb bag make?
About eight batches. The popping directions use half a cup, or 4 ounces, of kernels per batch, and a 2 lb bag holds eight of those. How much popped volume each batch gives depends on the method and how well the kernels have held their moisture.
What is the difference between medium white and baby white popcorn?
Size, almost entirely. Amish Country says the two are very similar except when it comes to size. Baby white pops into a smaller, more delicate piece; medium white gives larger popped kernels described as full, crispy and very white. Both are hulless white varieties with the same mild flavour.
