Open the bag and you get the dry mix plus a yeast packet, enough for one 1 1/2 lb loaf. Bob's Red Mill says the dough can be worked by hand, in a stand mixer, or run through a bread machine, so the same box suits whichever way your kitchen is set up.
Doing it by hand is a three-rise affair. Proof the yeast in warm water, mix and knead, then let the dough double in a covered bowl for about ninety minutes. Punch it down for a second rise of half an hour or so, shape it into a 9 x 5 pan for a final rise, and bake at 375°F for 30 to 40 minutes. Thump the top; a hollow sound means it is done.
It is a wheat mix, and it bakes into a dense, seeded sandwich loaf that holds up under fillings and takes well to the toaster. Two 19 oz bags.
