Product Details

Bob's Red Mill stone grinds white rice into a fine, soft flour, and this 1.5 lb bag is a workhorse of the gluten free pantry. It is certified gluten free and neutral in flavor, which is why it is the base most homemade all purpose gluten free blends are built on.

It does not behave like wheat flour. Without gluten to build structure it will not stand in one for one in a cake or a loaf; it wants a binder such as xanthan gum and usually a starch and a softer flour alongside it. Its faint granularity is an asset elsewhere. It fries into a light, crisp coating for fish and vegetables, gives shortbread a sandy snap, and thickens sauces and gravies cleanly without the flavor a roux brings.

It also handles rice noodles and dumpling wrappers. Letting a batter rest fifteen minutes before it bakes gives the flour time to hydrate.

Questions About This Product

The things people actually want to know before they cook with it.

Is this the same as sweet rice flour, glutinous rice flour or mochiko?
No, and they are not interchangeable. Sweet rice flour is milled from short sticky rice and behaves more like a starch, adding moisture and chew, and it is what mochi and butter mochi are built on. This is regular white rice flour milled from ordinary rice. Both are gluten free in spite of the glutinous name, but swapping one for the other will change the texture of whatever you are making.
How many cups are in the 1.5 lb bag?
A cup of white rice flour weighs about 142 grams and the bag holds 680 grams, so you get a little under 5 cups.
Can I use this in place of a 1-to-1 gluten free baking flour?
No. A 1-to-1 blend is a finished mix, typically sweet white rice flour, brown rice flour, sorghum flour, potato starch, tapioca flour and xanthan gum, formulated to swap for wheat flour cup for cup in non-yeast recipes. This is a single flour with no starch and no binder in it. It is an ingredient you build a blend from, not a drop-in replacement for one.
What is the difference between white and brown rice flour?
Brown rice flour is milled from the whole grain with the bran still on, which gives it a nuttier flavor, a darker color and more weight in a batter. White rice flour is milled from polished rice, so it is lighter and nearly flavorless, which is why it carries most homemade all purpose blends. Plenty of blends use both.
How much of it goes into a homemade gluten free flour blend?
A common blend uses 2 1/2 cups white rice flour with 1 cup potato starch, 1 cup tapioca flour, 1/4 cup cornstarch, 1/4 cup garbanzo bean flour and 2 tablespoons xanthan gum. White rice flour is roughly half of it by volume, so this bag makes close to two batches.
