Bob's Red Mill stone grinds white rice into a fine, soft flour, and this 1.5 lb bag is a workhorse of the gluten free pantry. It is certified gluten free and neutral in flavor, which is why it is the base most homemade all purpose gluten free blends are built on.
It does not behave like wheat flour. Without gluten to build structure it will not stand in one for one in a cake or a loaf; it wants a binder such as xanthan gum and usually a starch and a softer flour alongside it. Its faint granularity is an asset elsewhere. It fries into a light, crisp coating for fish and vegetables, gives shortbread a sandy snap, and thickens sauces and gravies cleanly without the flavor a roux brings.
It also handles rice noodles and dumpling wrappers. Letting a batter rest fifteen minutes before it bakes gives the flour time to hydrate.
