Bob's Red Mill Golden Masa Harina is corn flour made from kernels cooked and steeped in limewater, a process called nixtamalization, then dried and ground. That step sets it apart from cornmeal and lets it form a soft, pliable dough. The golden grind has a warm yellow color and a full toasted-corn flavor for tortillas, tamales, pupusas, sopes and gorditas. A spoonful also thickens chili or pozole.
