Muesli started in a Swiss clinic at the turn of the last century and has changed remarkably little: rolled grains, dried fruit and seeds, loosely mixed and left unbaked. That last part is the real line between muesli and granola. Granola is baked with oil and a sweetener until it clumps, while muesli stays dry and separate, which is exactly what lets it drink up liquid.

So this one goes two ways. Cold, tip it into a jar with milk or yogurt and leave it in the fridge overnight; by morning the grains have gone tender and the fruit has plumped. Hot, simmer it a few minutes in milk or water and you have something closer to a mixed-grain porridge, with the dried fruit softening into it.
