Are these kasha, or raw groats?
These are raw, untoasted groats. Kasha is the same kernel after toasting, which darkens it. You can make kasha from these by toasting them in a dry skillet over medium heat until fragrant, then cooking as usual. Toasted kasha cooks with less liquid and less time than raw groats: about 1 1/2 cups water per cup of kasha for 7 to 10 minutes.
What water ratio and cook time should I use?
Use 2 cups of water per 1 cup of groats. Bring the water to a boil, add the buckwheat and a little salt, return to a boil, then cover, reduce to a simmer and cook 10 to 15 minutes until tender. Drain off any liquid that has not been absorbed. One cup of dry groats makes about four servings.
Can I grind these into buckwheat flour?
Yes. Whole groats grind down in a grain mill or a high-powered blender, and grinding as needed is a common reason to buy groats rather than flour. Home grinding leaves a coarser result than commercial milling, so sift it if your recipe wants a fine flour.
Is this the same as Creamy Buckwheat hot cereal?
No. Creamy Buckwheat is buckwheat broken down to a fine, farina-like grind that cooks into a smooth porridge in a few minutes. These are whole intact kernels that stay separate and chewy, closer to cooked rice. Extra liquid and a longer simmer will soften them, but they will not turn into that smooth texture.
Is this the same buckwheat that soba noodles are made from?
It is the same grain. Be careful with the noodles themselves, though: most packaged soba is a blend of buckwheat and wheat flour, so soba is generally not gluten free unless the package specifically says 100 percent buckwheat.
