Bob's Red Mill stone grind this one on century-old stone-buhr millstones, 100% from the whole organic spelt berry, so it is a wholemeal flour rather than a refined one. Spelt is an ancient relative of modern wheat that originated in the Near East and later spread through Europe, and it has never been hybridised. The flavour is nutty and complex.
Spelt is a wheat and this flour contains gluten. Bob's Red Mill say it can be used in recipes calling for regular wheat flour — they point to yeast breads and quick breads in particular, and note the gluten also suits pasta, cookies and other baked goods. They describe the bread it makes as having a high rise and a substantial, chewy crust.
Bob's Red Mill also sell a conventional, non-organic Spelt Flour. The two are milled from the same grain but are different products with slightly different nutrition panels.
