Bob's Red Mill stone grinds the whole spelt berry into this flour — bran, germ and all — so it is a whole grain flour rather than a refined one. The result is soft and tan, with a mild flavour that is nutty and slightly sweet.

Spelt is a wheat, so this flour contains gluten. Its gluten behaves differently from modern bread wheat's: it is more delicate and breaks down under long mixing, so spelt dough goes slack if you knead it hard. It works in yeast breads, cookies, muffins, waffles and fresh pasta. Bob's Red Mill mill it from spelt grown in the United States, from the Sungold or Sammy varieties.

Substituting for wheat flour: Bob's Red Mill suggest starting by replacing 25% of the wheat flour a recipe calls for, and say you can generally substitute up to 50% in many baked goods. Spelt can be measured by weight or by volume, though weight is more accurate — it absorbs water a little differently, so small adjustments may be needed.

Storage: for optimum freshness, store in a cool, dry place — preferably in the freezer or refrigerator after opening.

I have coeliac disease. Can I use this flour?
No. Spelt is a species of wheat and this flour contains gluten, so it is not safe in coeliac disease or with a wheat allergy, and there is no small amount that becomes safe. If you need a gluten-free flour, buy one carrying a certified gluten-free mark rather than one sold on an ancient grain description.
Is spelt easier to digest than modern wheat?
We cannot make that claim. Spelt is a wheat and it contains gluten, so it is not an option for coeliac disease or a wheat allergy. Reports that some people get on better with it are anecdotal and are not something this store can substantiate. If wheat causes you symptoms, that is a question for a clinician rather than a choice of flour.
My spelt loaf came out squat and flat. What went wrong?
Spelt has fewer gluten-forming proteins than bread wheat, and the gluten it does form is very extensible but weak, so the dough stretches easily and holds gas poorly in a tall free-standing loaf. Spelt does well in pancakes, muffins, flatbreads and pizza, and tends to produce squat, misshapen sandwich loaves. Three adjustments usually help: use slightly less water than the recipe states, mix only until the dough comes together instead of kneading it smooth, and bake it in a tin rather than free-form. For a genuinely high loaf, use a recipe written around spelt rather than swapping spelt into a bread-flour recipe.
How is spelt different from einkorn and Kamut?
They are three different wheat species and all three contain gluten. Einkorn is Triticum monococcum, spelt is Triticum spelta, and Kamut is a trademarked brand name for khorasan wheat, a relative of durum. None of them is a gluten-free option. They are also not interchangeable cup for cup, since each takes up water differently and each builds a different amount of dough structure, so treat a swap between them as a change to the recipe.
Is this the same as white or light spelt flour?
No. White or light spelt has the bran and germ sifted out, which gives a paler flour, a finer crumb and a lighter result in cakes and pastry. This is the wholemeal equivalent, so it gives a denser and nuttier result. Bob's Red Mill do not sell a white spelt flour, so if a recipe specifically calls for white or light spelt, this will not drop straight in without adjusting the liquid and expecting a heavier crumb.
How does this differ from Bob's Red Mill Organic Spelt Flour?
Both are stone ground from whole spelt and both behave the same way in a recipe. The difference is that the organic one is milled from certified organic spelt and is sold as its own separate product. The two panels carry slightly different protein and fibre figures, so if you are tracking those numbers, read the panel on the bag you actually buy rather than assuming they match.
