Product Details

Bob's Red Mill Wheat Bran is the unprocessed outer layer of the wheat kernel, milled into fine, light flakes with a mild nutty taste. It is a source of insoluble fiber and adds a tender, slightly coarse texture to baked goods. Stir it into muffins, quick breads, pancakes and hot cereal, or sprinkle it over casseroles and cobblers before baking.

Each resealable bag holds 8 oz (227 g), about 17 quarter-cup servings. Unlike bran cereal, this is plain milled bran with nothing added, so you control the sweetness and can use it in savory dishes too.

Directions & Storage

Add wheat bran before cooking to hot cereals, muffin and quick bread batters, pancake mixes, cookie dough and casseroles. Start with 1/4 cup per batch of muffins or bread and work up to 1/2 cup; bran soaks up liquid, so add a splash more milk or water when you use more. It also goes straight onto yogurt, cereal or smoothies with no cooking.

Bran holds the kernel's natural oils, so store it in the refrigerator or freezer in a sealed container to keep it fresh. The bag reseals, but an airtight jar works best after opening.

Questions About This Product

The things people actually want to know before they cook with it.

What is the difference between wheat bran and wheat germ?
Bran is the fibrous outer layer of the kernel and bakes up light and flaky. Germ is the oily inner embryo with a richer, sweeter taste. They are not interchangeable in texture, though both can be added to batters.
Can I use it in place of oat bran?
Yes in muffins, breads and toppings. Oat bran turns creamy when cooked as porridge, while wheat bran stays flaky, so it is better stirred into oatmeal than cooked on its own.
Does it need to be cooked?
No. It is ready to eat sprinkled over yogurt, cereal or salads, or blended into smoothies.
Is wheat bran gluten free?
No. It comes from wheat and contains gluten.
How long does it keep?
Refrigerated in a sealed container it stays fresh for several months, and frozen it keeps about a year. At room temperature the natural oils can turn stale within a couple of months.
