Bob's Red Mill mills it in its natural state with the oils intact and prints toasting directions on the package; a few minutes in a dry pan or a low oven turns the flavor warm and nutty, which is how most cooks like to use it.

Think of it as a texture and flavor ingredient rather than a main event. Is wheat germ the same as wheat bran?
No. They are different parts of the same kernel and are not interchangeable. Bran is the hard outer shell and is used mostly for fibre, giving a coarse, dry crumb. Germ is the embryo inside, carrying the oil, and gives a softer, nuttier result. A recipe written for one will behave differently with the other.
Does wheat germ contain gluten?
Yes. It is milled from wheat kernels, and Bob's Red Mill states plainly that its wheat germ contains gluten and should be avoided by anyone with celiac disease or gluten intolerance. There is no gluten free version of wheat germ. If you need gluten free, this is the wrong product for you.
