A sweet-heat sauce from Fischer & Wieser, made in Fredericksburg in the Texas Hill Country, where the company grew out of a family peach orchard and roadside fruit stand. Raspberries carry the sweetness and tartness; roasted chipotle peppers bring smoke and a medium warmth that the fruit keeps in check.
Its most famous use is the one Texas hosts have relied on for years: set out a block of cream cheese, pour the sauce over the top so it runs down the sides, and serve with crackers or gingersnaps. It takes a minute and it is usually the first thing to go.
Beyond that, treat it as a glaze. Brush it onto pork tenderloin, ribs or chicken thighs in the last few minutes of cooking, whisk it with oil and vinegar for a vinaigrette over greens and goat cheese, stir it into a barbecue sauce, or spoon it over roasted vegetables and carnitas tacos.
