How does this compare with Kodiak Cakes?
Flourish carries more protein per serving: 23 g prepared with water against 15 g for Kodiak Buttermilk Power Cakes made the same way. The serving sizes on the two panels are not identical, so compare the labels directly if the exact figure matters. The other differences are sweetener and texture. Flourish uses monk fruit concentrate with no added sugar, and it produces a denser, chewier pancake.
Why do the pancakes come out denser than a regular mix?
Because two of the main ingredients are proteins rather than starch. Whey concentrate and wheat protein isolate set firm as they heat instead of holding gas the way a starch and gluten batter does, and the wheat bran and milled flax add further weight. The result is closer to a griddle cake than a fluffy diner pancake. Spreading the batter thinner helps if you want a lighter result.
Why do my pancakes brown before the middle is cooked?
The whey is doing it. Dairy proteins and the small amount of sugar in the mix brown at a lower temperature than a plain flour batter, so a pan hot enough for a standard pancake will colour these too quickly. Drop the heat to medium or just below, give each side longer, and judge doneness by the edges setting rather than by colour.
Can I bake with it instead of making pancakes?
Yes, the brand points at waffles, muffins, protein bars and doughnuts. Use less liquid than the pancake ratio so the batter holds its shape in a tin, and bake a little cooler than the recipe you are adapting, because the whey browns fast and a muffin has no griddle contact to set the outside first.
Can I mix the batter the night before?
