Hidden Valley's buttermilk ranch mix is the dry counterpart to the bottled dressing: a pre-portioned blend of herbs, onion and seasoning in a small foil packet, three packets to the box. You supply the dairy and the fat, which is the point of it. One packet stirred into a cup of buttermilk and a cup of mayonnaise makes about two cups of dressing, and half an hour in the refrigerator thickens it into the flecked, pourable ranch served in diners and pizza shops.
Because you control the ratio, the mix does things a bottle cannot. Lean on sour cream and skip most of the buttermilk and you have a thick dip for wings and crudites; loosen it with extra buttermilk and it dresses a slaw or a pasta salad.
The packet is just as useful dry. Shake it over potato wedges before roasting, onto hot popcorn, across chicken thighs headed for the oven, or work it into ground beef for burgers. Three packets is one for the dip bowl and two in reserve.
