The Complete Guide
Tips For Clean Baking
- Fill two thirds full. Batter that rises over the rim bakes onto the pan instead of the liner, which is what makes cupcakes stick.
- Let them cool before peeling. A warm cupcake clings to its wrapper. Ten minutes on a rack and the paper releases cleanly.
- Expect a natural brown color. Unbleached paper is tan, not white, and it stays tan after baking. Dark batters show through less than pale ones.
- Double up for display. For a bake sale, set each baked cupcake into a second clean cup so the outside looks fresh.
- Skip the spray. The paper is greaseproof. Oil on the cup makes the wrapper slide around in the pan.
Beyond Cupcakes
- Egg bites and mini frittatas. Whisk eggs with cheese and vegetables, fill the cups and bake at 350 F for 20 minutes for a week of breakfasts.
- Mini quiches and savory muffins. The greaseproof paper handles buttery pastry and cheese without soaking through.
- Freezer portions. Spoon pesto, tomato paste, stock or baby food into lined muffin tins, freeze, then pop the paper-wrapped pucks into a bag.
- Candy and nut cups. Line a tin for chocolate bark, peanut butter cups or a party tray of snacks.
- Seed starting. The cups are compostable, so seedlings can go into the garden paper and all.
Who It's For
- Home bakers who want plain, unbleached liners instead of printed or coated ones
- Households that compost and want packaging and liners that go in the same bin
- Meal preppers making egg bites and freezer portions every week
- Schools, bake sales and small bakeries, since 180 cups covers a lot of Saturdays
Recipes to Make
Make-Ahead Egg Bites
Ingredients
- 12 If You Care Large Baking Cups
- 8 eggs
- 1/3 cup milk or cream
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup grated cheddar or Gruyere
- 1 cup cooked add-ins: spinach, bacon, peppers or mushrooms
Steps
- Heat the oven to 350 F and set a baking cup in each well of a 12-cup muffin pan.
- Whisk the eggs, milk, salt and pepper until no streaks of white remain.
- Divide the cheese and add-ins among the cups, then pour the egg mixture over them, filling each about two thirds full.
- Bake 20 to 22 minutes, until puffed and just set in the center.
- Cool 5 minutes. Eat warm, or refrigerate up to 5 days and reheat 30 seconds in the microwave.
Tip: Do not fill past two thirds. Egg puffs high in the oven and spills over the rim onto the pan.
Questions About This Product
The things people actually want to know before they cook with it.
Does this pack include Jumbo or Mini cups?
No. This pack contains only the Large size.
Is Large the same as a standard cupcake liner?
Yes. If You Care calls its standard size Large. It fits the wells of a regular 12-cup muffin pan.
Will the paper go see-through or greasy?
No. The paper is greaseproof, so butter and oil stay inside the cup. Pale batters can show a little color through the tan paper, which is normal.
Can I use them in an air fryer?
Yes, as long as the air fryer runs at or below the oven-safe temperature printed on the box, and the cups are weighed down with batter so they do not blow around.
Can I compost them with batter residue on them?
Yes. A used cup with a few crumbs or a smear of batter is fine for a home compost pile or a municipal food-waste bin.
Why do my cupcakes stick to the paper?
Usually because they were peeled while still warm or the batter was very low in fat. Let them cool fully, and if a recipe is fat free, expect a little more cling.
