Jell-O Chocolate Fudge Cook & Serve is the stovetop pudding, not the instant kind, and that is the single most common mix-up worth catching before you start. Instant sets cold in a bowl with a whisk. This one goes into a saucepan with two cups of cold milk and comes to a boil while you stir constantly. The cooking is what builds the thick, dark, glossy body that instant mixes do not reach.

Each 3.4 oz box makes four half-cup servings, so a four pack runs to sixteen. Serve it warm from the pan in mugs, or press plastic wrap onto the surface and chill it if you would rather not have the skin form. Plenty of cooks chase that skin on purpose.

The box doubles as pie filling. Cooked and poured into a baked shell, it sets firm enough to slice, which is the basis of an old-fashioned chocolate cream pie. It also does the work in icebox cakes, eclair cake and trifle layers.

Can I use this in a recipe that calls for instant pudding?
No, and this is the mix-up worth catching. Instant mixes are built to thicken cold in a couple of minutes of whisking, while this one relies on starch that only thickens once the mixture reaches a boil. Any recipe that folds dry mix into whipped cream, cake batter or a no-bake filling needs the instant kind. Cook & Serve works only where the recipe has you cook the pudding first.
Will it set if I skip the cooking and just whisk it into cold milk?
No. Unheated, the mix stays thin and slightly gritty, because the starch has to be brought to a boil before it swells and thickens. Reaching a full boil is what turns it into pudding, and it firms further as it cools. There is no shortcut version of this step.
Can I make it with almond, oat or soy milk?
Yes. The thickening comes from the starch in the mix rather than from the milk, so a plant milk still sets once the pudding is brought to a boil. Use an unsweetened variety, since sweetened plant milks will make the finished pudding noticeably sweeter than the box intends. Soy and oat give a result closest to dairy in body.
Does it contain gelatin? Is it suitable for vegetarians?
There is no gelatin in this mix. Jell-O gelatin desserts and Jell-O pudding mixes are different products, and the pudding mixes are thickened with starch instead. Nothing in the dry mix is animal-derived, so the pudding is vegetarian, though it is made with milk and so is not vegan unless you use a plant milk.
Why does it have to be stirred constantly?
The starch thickens quickly and unevenly as the milk approaches boiling, and it settles on the bottom of the pan where it scorches. Constant stirring keeps the base of the pan clear and breaks up lumps before they have a chance to set. A minute of inattention near the end is usually where a grainy or slightly burnt batch comes from.
