I am coeliac. Is the regular red-cap Kikkoman safe if I only use a little?
No. Kikkoman's standard soy sauce is brewed from water, soybeans, wheat and salt, so wheat is a main ingredient rather than a trace of cross-contact, and there is no safe small amount. This bottle is the one to use instead. If both bottles live in the same kitchen, keep them clearly apart and do not pour the wheat-brewed one into a shared dipping dish.
Is this the same thing as Kikkoman's Gluten-Free Tamari?
No, they are two different products. Kikkoman's Gluten-Free Tamari is brewed from water, soybeans, salt and sugar, with no cereal grain in it at all, while this bottle is brewed with rice standing in for the wheat. Both carry the same gluten-free certification. Kikkoman also sell a 50% less sodium version of the tamari, which this sauce has no equivalent of, so if you want a lower-sodium gluten-free bottle, that is the one to look for.
Who certifies it gluten free, and how strict is that standard?
Kikkoman have it certified by the Gluten Intolerance Group of North America, which runs the Gluten-Free Certification Organization programme. That programme sets its limit at 10 parts per million of gluten, which is half the 20 ppm the FDA allows before a product may not be labelled gluten free. So the certification on this bottle is a tighter standard than the legal minimum, not simply a restatement of it.
Does it taste the same as regular Kikkoman?
Kikkoman's own wording differs between the two. They describe the regular soy sauce as aged for months to a mellow flavour with savoury umami, and describe this one as having a mild flavour while claiming the same rich, savoury umami character.
