Kinnikinnick has been baking in Edmonton, Alberta since 1991, and the vanilla wafer is the cookie the bakery is best known for. It's a small, light, golden round with a clean vanilla flavor and a crisp snap, close enough to the wafer most American cooks grew up with that it slots into their recipes without adjustment.

Banana pudding is built on vanilla wafers: layered with sliced banana and custard and left to sit overnight, by which time the wafers have softened into something between cake and cookie.
