Minor's Pork Base, 16 oz

Minor's is Nestlé Professional's foodservice line of concentrated bases, and the pork version comes as a thick paste rather than a powder or granule. It is made with cooked pork and stirs directly into hot water to make stock. The brand's stated ratios are roughly 3/4 teaspoon per cup, 1 tablespoon per quart, and one full 16 oz tub per 5 gallons, so a single container covers a lot of liquid.

Use it wherever a pork stock or a savory pork note is wanted: ramen and noodle broths, bean and greens soups, braises, pan sauces and gravies, or stirred into beans, rice, or vegetables. Because it is a concentrate rather than a ready-to-pour liquid, you set the strength of the finished stock yourself and can also use it undiluted as a seasoning. Minor's directs that the base be kept refrigerated.
