Once Again roasts and grinds blanched peanuts into a smooth, spoonable butter that tastes plainly of the nut. This is the single 16 oz unsalted jar, the one cooks and bakers reach for when they want to set the seasoning of the finished dish themselves rather than work around a salted jar.

It is made in Nunda, New York by a company that its workers own outright. The founders began handing the business to their staff in the 1970s, first as a worker co-operative and now as a 100 percent employee-owned ESOP, so the people grinding and packing the peanuts hold the shares.

Expect a layer of oil on top when you open it. That is how natural-style peanut butter behaves, and a firm stir with a table knife brings it back together; keeping the jar upside down between uses makes the next stir easier. 12 months from the date of production. Once opened, we recommend a three month shelf life. We cannot guarantee product performance past the sell-by date as we do not add preservatives to our products.

While refrigeration of this product isn't necessary, if stirring is something you wish to minimize, stir and then refrigerate. Please be aware that if left out at room temperature, natural oil separation will occur.

Why is there a layer of oil on top of the jar?
Oil rising to the top is what natural peanut butter does when the jar is peanuts and the oil has nothing holding it in suspension. It signals that the peanut butter has not been stabilized, not that anything has gone wrong with the jar. Stir it back through and the texture returns to uniform.
What is the least messy way to stir it back in?
A sturdy table knife or a narrow spatula worked down through the jar and around the sides takes about a minute and is what most people use. Screw-on jar stirrers also exist and do a tidier job of containing splashes while they mix. Turning the jar upside down by itself will not remix it, though flipping the jar between uses does help keep the oil distributed.
Does refrigerating it stop the separation?
Refrigeration slows the oil from rising again once you have stirred it in, at the cost of a firmer, harder-to-spread texture. Kept at room temperature it stays soft and easy to spread but will begin separating again within roughly a week. Which you choose comes down to whether you care more about spreadability or about not stirring.
Should I pour the oil off the top?
Better not to. That is peanut oil that belongs to the peanut butter, and pouring it away leaves the rest of the jar stiff, dry and difficult to spread by the time you reach the bottom. Stir it in instead, even though it takes a minute of work.
Can I bake with this in place of a conventional peanut butter?
You can, but stir the jar thoroughly right before you measure. Scooping mostly oil off the top makes cookies spread too far, while scooping the dense solids from the bottom gives you dry, stunted ones. This jar is also unsalted and unsweetened, so a recipe written around a sweetened, salted supermarket brand may want a little extra seasoning in the dough.
How is the unsalted jar different from Once Again's salted one?
The difference is precisely what the name says: the unsalted jar is ground peanuts on their own, while the salted version adds salt for a rounder, more familiar flavor. Both are the same creamy grind of dry roasted organic peanuts. Cooks who want to control seasoning themselves, or who are stirring the butter into sauces and dressings where salt arrives from elsewhere, generally reach for the unsalted jar.
How does this differ from Once Again's No Stir peanut butter?
The No Stir version is stabilized with organic palm fruit oil and also carries organic sugar and salt, which is what keeps it mixed on the shelf. This jar is the plain natural grind, which is exactly why it separates. If stirring is the deal breaker for you, the No Stir line is the one to look at; if you want peanuts and nothing else, this is the jar.
What does it mean that Once Again is employee owned?

Is Honest in Trade the same as Fair Trade certification?
No. Fair Trade is an independent third-party certification run by outside organizations with their own published standards and seal. Honest in Trade is Once Again's own program name for how it handles sourcing and sustainability, supported by external verification partners but not equivalent to a Fair Trade mark. Once Again does hold separate independent certifications, including USDA organic through Oregon Tilth and Non-GMO verification.
Where do the peanuts come from?
Once Again sources its organic peanuts from growers in the United States, Argentina and Nicaragua, with the blend depending on crop and season. The peanuts are blanched and dry roasted before grinding into the creamy texture. The company runs aflatoxin testing on peanuts both before and after production as part of its quality program.
Why is it packed in glass instead of plastic?
Once Again packs this in a glass jar and lists recycled glass packaging as part of its sustainability program. Glass also makes it easy to see the oil layer and judge how much is left.
