Stirrings Pure Cane Simple Syrup is the sweetener bartenders reach for when a drink is built cold. Granulated sugar needs time and agitation to break down, and in an iced shaker or a chilled glass it tends to sink and sit at the bottom as grit. A syrup has already done that work, so it folds in on the first stir and sweetens the whole drink evenly, top to bottom.
The 12 ounce glass bottle pours in a controlled stream, so you can measure it by the quarter ounce the way you would any other ingredient. The sweetness itself stays neutral, which keeps the spirit, the citrus and the bitters in front where they belong.
