Product Details

An unrefined cane sugar from Mauritius, an island in the Indian Ocean off the southeast coast of Africa, sold under the India Tree label. Cane sugar is the only ingredient. Conventional brown sugar is refined white sugar with molasses added back into it; muscovado instead keeps the molasses it started with, and the dark grade keeps the most of it.

What you get is a very dark, moist, sticky sugar with soft clumps and a coarser crystal than standard brown sugar, carrying a strong molasses flavor. It is used in gingerbread, sticky toffee pudding, dark fruitcake, chocolate and molasses cakes, and in barbecue sauces, marinades and glazes. It measures like brown sugar but is stickier, so it is worth breaking up the clumps by hand or through a sieve before creaming it with butter. India Tree labels it Fair Trade Certified. One pound.

Questions About This Product

The things people actually want to know before they cook with it.

What is muscovado sugar?
Muscovado is unrefined cane sugar that keeps the molasses it was made with. Ordinary brown sugar is refined white sugar with molasses stirred back in afterwards; in muscovado the molasses was never taken out, so it stays inside the crystal. That is why it is darker, wetter and stickier than brown sugar, and why the molasses flavour runs right through it instead of coating the surface.
What can I use instead of muscovado sugar?
Dark brown sugar, measured one for one, is the closest everyday swap. It is drier and milder, so adding about a tablespoon of molasses per cup closes most of the gap on both flavour and moisture. In the other direction, muscovado stands in for dark brown sugar cup for cup in anything baked, though it darkens the crumb and reads stronger.
What is the difference between muscovado and brown sugar?
Processing, and it shows up in the texture. Brown sugar is refined white sugar with molasses added back, so the molasses sits on the outside of the crystals; muscovado never had it removed. In practice muscovado is darker, noticeably moister, coarser and clumpier, and tastes stronger with a faint bitterness behind the sweetness. Baked into a batter it gives a denser, darker, more fudgy result.
What is the difference between light and dark muscovado?
How much molasses is left in. Dark keeps more of it, so it is close to black, wetter, and stronger with a slight bitterness; light is paler and softer in flavour, nearer a good brown sugar. Dark suits gingerbread, sticky toffee pudding, dark fruitcake and barbecue glazes; light suits shortbread, blondies and anywhere the molasses should not dominate. They swap one for one by volume, with a shift in colour and intensity.
What is the difference between muscovado and demerara sugar?
Demerara is a large, dry, crunchy golden crystal that holds its shape; muscovado is fine, damp and soft. Demerara is used where the crystal should stay visible and crisp, such as sprinkled on scones or over a crumble topping, or dissolved into a cocktail syrup. Muscovado dissolves into a batter and colours it. They do not substitute for one another: demerara scattered on a cake stays crunchy, while muscovado simply melts in.
Where does muscovado sugar come from?
This one is grown and milled in Mauritius, an island in the Indian Ocean off the southeast coast of Africa with a long cane-sugar history. Muscovado is also produced in the Philippines, Colombia and India, and the origin carries through to the flavour because the molasses is native to that cane rather than blended in later. India Tree labels this sugar Fair Trade Certified.
