Why does Duke's taste different from other mayonnaise?
No sugar. Duke's states that its mayonnaise contains none, which is unusual among the major brands and is the biggest single reason it reads tangier than the jar most people grew up with. The formula also leans on cider vinegar alongside distilled vinegar and carries paprika, and both push it further toward tang than toward sweetness.
What is the difference between Duke's and Hellmann's?
Both meet the same federal definition of real mayonnaise, at least 65 percent oil by weight with egg and vinegar and no starches or gums allowed. They diverge after that. Hellmann's includes sugar and lemon juice concentrate; Duke's includes neither, uses cider vinegar alongside distilled and adds paprika. So Duke's lands tangier and Hellmann's rounder and slightly sweeter, and which one is right depends on the sandwich rather than on quality.
How many packets equal a cup of mayonnaise?
About twenty four. Each Duke's portion packet holds 9 grams, so a half cup is roughly twelve packets and two tablespoons is about three. If the amount matters, as it does in a dressing or a batter, weigh out 220 grams for a cup instead of counting packets.
Is the mayonnaise in the packets the same as the jar?
Yes. The portion packet is Duke's Real Mayonnaise made to Eugenia Duke's 1917 recipe, the same product as the jar in a single serve pouch rather than a thinner or separate foodservice formulation. Note that it is the Real version, not the Light, which Duke's packets separately.
Can I bake with it?
Yes, and Duke's says to treat it as you would any shortening. Mayonnaise is oil and egg already emulsified, so it goes into a chocolate cake or cornbread as the fat and part of the liquid, and it browns and crisps on the outside of a grilled cheese. Twenty four packets makes the cup that a mayonnaise cake usually calls for.
Will mayonnaise potato salad spoil at a picnic?
The mayonnaise is not the weak point. Commercial mayonnaise runs at a pH between 3.8 and 4.6, acidic enough that it does not support the bacteria it gets blamed for, and Duke's says as much directly. What spoils is what the mayonnaise is dressing, the potatoes and eggs and chicken, so the salad still needs to be kept cold. Packets help in the sense that each one is opened once and used, with nothing standing open in the heat.
Why buy packets instead of a jar?
Two reasons: a sealed packet does not need refrigeration until it is opened, and the portion is already measured. That suits packed lunches, break rooms, catering and anyone counting intake closely enough that a spoonful is not precise enough. The trade offs are more packaging and a higher cost per ounce than a jar.
How long do sealed packets keep?
Duke's gives its single serve mayonnaise pouches a 180 day shelf life from production, and each packet is sealed on its own. Opening the box does not start a clock on the packets still inside it.
My packet looks oily or split. What happened?
Temperature. Duke's notes that mayonnaise held below about 35F or above about 90F can separate and discolor, and freezing in a cold delivery truck or sitting in a hot car will both do it. The product is still technically safe at that point, but it will not look or taste right and the emulsion does not reliably come back together by stirring.
