Cookies United Cakebites Italian Rainbow are bite-sized versions of the classic Italian rainbow cookie: three thin layers of almond-flavored cake in pink, yellow and green, separated by raspberry jelly, coated in dark chocolate and topped with chocolate sprinkles. The cake is moist and dense with a marzipan-like almond flavor, and the chocolate shell snaps. Each pack holds three bites, sized for a quick snack or a lunchbox treat.

Directions & Storage

Open a pack and eat at room temperature, or chill for 20 minutes for a firmer bite and a cleaner chocolate snap. Cut each bite in half to show the colored layers on a dessert tray.

Store in a cool, dry place away from heat. Chocolate softens above about 75 F. Once a pack is opened, eat the bites within a day or two.
