Product Details

Admiration Pro-Fry is a liquid frying shortening made from high oleic soybean oil, the same product restaurants pour into deep fryers. It stays liquid at room temperature, has a bland, neutral flavor and resists breaking down under repeated high heat, so it lasts longer in the fryer and foams less than regular soybean or vegetable oil. It is non-hydrogenated with 0 g trans fat per tablespoon.

This 8 lb (3.63 kg) jug holds about a gallon of oil. Compared with a solid shortening it needs no melting, and compared with regular vegetable oil it holds up far longer before it darkens and smokes, which makes it the better buy for anyone who fries every week.

Ingredients

High Oleic Soybean Oil, TBHQ and Citric Acid Added to Help Preserve Freshness, Dimethylpolysiloxane.

Directions & Storage

Pour into the fryer to the fill line and heat to 350 to 375 F for most foods. Skim crumbs during frying, filter the oil through a fine strainer once it has cooled after each use, and top off with fresh oil as the level drops. Replace the oil when it darkens, smokes at frying temperature or foams heavily. For pan frying and sauteing, use it like any neutral cooking oil.

Store the sealed jug upright at 65 to 75 F away from items with strong odors, since oil picks up flavors. Unopened it keeps about 12 months from the production date. After opening, cap tightly and keep it away from heat and light.

Questions About This Product

The things people actually want to know before they cook with it.

Is Pro-Fry the same as Whirl?
No. Whirl is a butter-flavored liquid oil from the same maker, Stratas Foods. Pro-Fry is unflavored frying shortening, so it will not add butter taste to your food.
What is the difference between liquid shortening and vegetable oil?
Liquid shortening is oil formulated for frying. Pro-Fry uses high oleic soybean oil, which is far more stable at high heat than regular soybean or canola oil, so it lasts through more fry cycles with less foaming and off flavors.
What is the smoke point?
Stratas does not publish a figure, but high oleic soybean oil handles standard deep-frying temperatures of 350 to 375 F with room to spare and is made for repeated heating.
Does it need refrigeration?
No. Keep it capped at room temperature away from the stove and sunlight. It stays liquid and pourable.
Can I bake or saute with it?
Yes. Use it one for one in place of vegetable oil in cakes, muffins or marinades and for sauteing. It will not replace solid shortening where you need a firm fat, such as pie crust or biscuits.
How many times can I reuse it?
That depends on what you fry and how hot. Filtered and stored covered, it typically lasts several rounds of frying, longer than regular oil. Change it once it turns dark, smells off or foams up.
