Honey Garlic Scallop Kabobs
Ingredients
- 12 slices bacon, cut crosswise in half
- 24 large sea scallops (1 1/2 lb)
- 1/2 tsp black pepper
- 1/3 cup Heinz Tomato Ketchup
- 3 tbsp honey
- 3 tbsp lite soy sauce
- 1 tbsp lemon juice
- 1 1/2 tsp garlic, minced
Steps
- Heat a greased grill to medium.
- Cook the bacon in batches in a large skillet over medium heat, turning halfway, until nearly done but still pliable. Drain on paper towels and let cool slightly.
- Pat the scallops dry and season with pepper. Wrap each scallop in a piece of bacon and thread two onto each of 12 small skewers.
- Whisk the ketchup, honey, soy sauce, lemon juice and garlic until blended. Set aside half of the sauce and brush the kabobs with the rest.
- Grill 3 to 5 minutes per side, until the scallops are opaque. Brush with the reserved sauce during the last few minutes.
Tip: Keep the bacon pliable rather than crisp so it wraps around the scallops and finishes on the grill.
