Pocono Organic Cream of Buckwheat Cereal (3x13 oz.)

Three 13-ounce packages of the same Pocono hot cereal, 39 ounces of buckwheat meal in all, for a household that empties a single box faster than it would like. Each package is resealable, so two can stay closed in the pantry while the third is in use.

The cereal is buckwheat groats stone ground to a fine meal at The Birkett Mills in Penn Yan, New York, which has milled buckwheat there since 1797. The Birkett Mills lists it as USDA Certified Organic and as batch tested and verified gluten free. It is sold raw and has to be cooked through before it is eaten. On the stovetop it comes up as a smooth porridge with an earthy, faintly nutty flavor; cooked thick it takes maple syrup, butter or fruit, and cooked looser it works under a poached egg or stirred into soups and stuffings.
